This sweet potato paleo breakfast hash is loaded with flavor, filling, nourishing, and has the perfect sweet/savory balance. Pan fried sweet potatoes are cooked with seasoned ground meat, greens, apples and cranberries for a delicious Whole30 and Paleo breakfast without the eggs!

Egg-free Paleo and Whole30 breakfast options might be the most consistent recipe request I receive.

The funny thing is, that even though I do include a fried egg to top off my breakfast on most days, the “main” part of my meal is everything else – it’s almost always a “hash” – loaded with all my favorite goodies like sweet potatoes or plantains, kale, sausage or bacon and apples.

In fact, left to my own devices, I wind up eating something just like this loaded Paleo breakfast hash for every single meal, which is why it’s probably a good thing that I also have to cook for other people occasionally (HA!) too.

Anyway, to make this one filling and truly loaded with flavor, even without the egg, I went the sweet-savory route, which is my favorite way to go.

For the sweet side, we have sweet potatoes, apples, and fruit-sweetened (for Whole30) dried cranberries.

On the savory side, is kale plus ground meat (I used pork, but chicken, turkey or beef are just fine) seasoned either with Primal Palate’s Breakfast Blend(use this all the time!) or a similar blend of seasonings. Since I love that seasoning so much, you’ll also use it to season your sweet potato mixture – trust me – this one is sooo good!

This hash is super easy to throw together, and you’ll cook everything on the stovetop so it’s ready in just about 20 minutes, depending on your stovetop.

Just a side note – I cook on a gas stove in my own kitchen, and recently realized that cooking on an electric stove can change the times I list in my recipes. If you’re cooking on an electric stovetop, you’ll probably need to use higher heat, and/or cook longer to get the same results.

I actually just spent a week with relatives on the West Coast and wound up cooking my usual breakfast hash on an electric stove all week. At first it seemed like my hash would never cook, until I got a feel for the stove and started using a higher heat setting.

Anyway, regardless of whether your stove is gas or electric, expect to have to adjust the heat s bit as you cook in order to get everything to brown the way you want it to, and not turn out soggy or burnt.

Even still, the combination of ingredients here is so tasty that no matter what (even if it’s not 100% perfect), this hash is bound to be delicious!

Ingredients

  • 2medium sweet potatoespeeled and diced small (1/2”)
  • 1lbground porkOR chicken, or beef
  • Salt and pepper
  • Spice mixture below OR 1 1/2 Tbsp Primal Palate Breakfast Blend
  • 1tspcinnamon
  • 1/2tsponion powder
  • 1/2 tsp garlic powder
  • 1/2 tspsage
  • 1/2tspturmeric
  • 1largehoney crisp applediced
  • 3cupskalechopped + 1-2 Tbsp water or broth
  • 2-3Tbspghee or coconut oil, for cooking

Instructions

  1. For this recipe, you’ll brown the meat separately from the potatoes, I like to do this in two skillets side by side, but you can also use the same one, browning the meat first and setting it aside.

  2. Brown meat in about 1 tbsp coconut oil or ghee, sprinkling with salt, pepper, and half the seasoning, once browned, set aside.

  3. In a large skillet, add 1-2 Tbsp ghee and heat to med/hi. Add potatoes, sprinkle with salt and pepper, cook about 2 minutes uncovered, stirring to brown.

  4. Cover the skillet and lower heat to medium, cook another 3-5 minutes, stirring once midway, until soft. Uncover and add apples, kale and water or broth, then cove again and cook 1-2 minutes, uncover and sprinkle with remaining seasoning. Continue to cook another minute uncovered or until toasty.

  5. Add browned meat to potato mixture and stir, cook another 30 seconds to warm and then remove from heat, serve right away. Enjoy!
